This is the breakfast (or lunch) I make when I need something warm, savoury, and ready in five minutes. It’s the kind of throw-together meal that tastes like you tried (you didn’t), thanks to the salty olives and those chewy, punchy sun-dried tomatoes. Protein-rich, satisfying, and honestly just a nice little moment in the morning.
Ingredients
- 2 eggs
- 4 sun-dried tomato pieces, chopped
- 1 tbsp olives, sliced
- 1 tsp olive oil
- Salt & pepper
Method
Warm the olive oil in a small pan over medium heat.
Sauté the sun-dried tomatoes and olives for 1–2 minutes until fragrant.
Pour in the beaten eggs. Stir gently or leave to set – whatever you prefer. Cook until just set.
Season with salt and pepper. Serve immediately.
